Congratulations to Patty Ging from Fontstown Guild, Athy who won 2nd Prize in the Gem Pack Cake Competition in An Grianán in March. Patty has kindly allowed her recipe to be published here so you too can bake a winning cake.




Using Gem Pack Products

Ingredients:
10½ oz Self Raising Flour
6½ oz Castor Sugar
5½ oz Marg or Butter
4 oz Mixed Dried Fruit
1 oz Ground Almonds
Pinch of Salt
3 Large Eggs
3 Tablespoons of Milk
A Few Drops of Vanilla Essence
A Few Chopped Almonds for Topping

Method:
Cream butter and sugar until light and fluffy
Sieve flour and salt together
Stir eggs in one at a time with a little of the sieved flour, stir and then beat well
Stir in milk with a little more flour and beat again
Add fruit, flavouring and ground almonds and the rest of the flour. Do not beat, just stir in thoroughly
Put the mixture into an 8 inch well lined round tin and smooth top before adding the chopped almonds topping
Cover top of tin with greaseproof paper until cake is ¾ of an hour cooked then remove paper and cook for a further 30 minutes
Baking time is about 1¼ hours in Fan Oven at 180º F or Gas Mark 4 on Middle shelf of oven
